Materials & Tools Needed
Step-by-Step Instructions
Create Flour Well
On a clean surface, mound flour and make a well in the center. Add salt and a drizzle of olive oil into the well.
Add Eggs
Crack eggs into the well. Start whisking eggs with a fork, gradually incorporating flour from the inner edge of the well.
Knead the Dough
Once a shaggy dough forms, start kneading by hand. Knead for 8-10 minutes until dough is smooth, elastic, and no longer sticky. Add a tiny bit more flour if too wet, or water if too dry.
💡 Pro Tip
The dough should feel firm but pliable.
Rest the Dough
Wrap the dough tightly in plastic wrap and let it rest at room temperature for at least 30 minutes. This relaxes the gluten, making it easier to roll.
Roll and Shape
Divide dough into portions. Roll out thinly using a pasta machine or rolling pin. Cut into desired shapes (fettuccine, tagliatelle, lasagna sheets).
💡 Pro Tip
Dust pasta lightly with semolina flour to prevent sticking.
Cook the Pasta
Boil pasta in generously salted water for 2-4 minutes, or until al dente. Fresh pasta cooks very quickly.
